East Bethel is a city in Anoka County, Minnesota, United States. The population was 11,626 at the 2010 census.

Minnesota State Highway 65 and Anoka County Road 22 are the main routes in the city. Highway 65 runs north–south, and County Road 22 runs east–west.

According to the United States Census Bureau, the city has a total area of 47.97 square miles, of which 44.80 square miles is land and 3.17 square miles is water.

As of the census of 2010, there were 11,626 people, 4,060 households, and 3,221 families residing in the city. The population density was 259.5 inhabitants per square mile. There were 4,237 housing units at an average density of 94.6 per square mile. The racial makeup of the city was 95.9% White, 0.4% African American, 0.5% Native American, 1.6% Asian, 0.3% from other races, and 1.3% from two or more races. Hispanic or Latino of any race were 1.0% of the population.
